Rice and Chicken Soup #Nigeria

Hey!! So to start this blog, I am opening with a Nigerian delicacy.. Soup is essential in everyday eating in Nigeria. Whether for Rice, Eba (Made with Cassava) etc.

Now for non Nigerians, Our soup is different from the kind of soup I saw here in Ireland- in which you find veg like carrots and peas- and we don't drink our soup alone, like Lemsip, not even from a cup. If you drank our soup from a cup, well, may God help you.

So Let's Get Started

INGREDIENTS

  1. Chicken
  2. Rice
  3. Tomatoes (Fresh or tinned plum)
  4. Little Red Pepper(Nigerians call it ata rodo) or Chilli pepper
  5. Onions
  6. Maggi
  7. Salt
TO COOK

So I believe we all know how to cook rice.. Ye? Just in case, just wash up your rice and put in your rice cooker. If you wanna cook it like us, add some water to your washed rice, add some salt, two spoons of cooking oil or butter, and some onions. Then check on it often to see if your added water is enough or too much- you know it's too much when your rice is already soft and still in a pool.

So I'd take it our rice is done.

For chicken (already cut in pieces), I washed my chicken and put in a pot and added sliced onions, four cubes of maggi and a little salt, then I added the amount of water enough to wash the seasoning ingredients off my hand. The reason I don't add much water to my chicken is because when chicken is cooking, it produces juice which makes up the water that will cook it. So if I add to much water, I'd later have .

So after my chicken boiled up, I put them on a plate, and saved my chicken stock.


So I had my tinned plum tomatoes, red pepper and onions blended -now that's our kind of soup-  and added them to m chicken stock. I did this so I wouldn't have to use seasoning ingredients for my soup.


Now, I waited for up to 30 minutes for my soup to cook thoroughly then I added my boiled chicken.

All that was left to do was to let them cook together for like 10 minutes and voila, my chicken soup was ready to be tucked in. 




P.S This is the same way beef soup is cooked.
